"Crazy Okie Life's Delicious Chicken Enchiladas: A Not-So-Authentic, Yet Mouthwatering Recipe"

Not authentic, but close enough. haha Try this tasty meal not from the border.

Crazy Okie Life's list of favorite flavorful meals has this yummy meal kit pick as #1 on the list, Chicken Enchiladas.
I know I don't have those Hispanic genes running through my veins but who doesn't love some of those tasty cuisines from our southern borders? I know I do so here is my quick and tasty version that makes my whole family go back for more.
Enchiladas will take some time so make sure you have plenty of time to add that love to this meal.
Ingredients
Small Corn Tortillas (not street taco small though)
Chicken Breasts about 4 or 5 pieces - I use extra for quesadillas next day
Can of Red & Green (Verde) Enchilada Sauce
Yellow Onions - I have used white & red also - white is stouter, red is softer onion flavor
Bell Peppers - I like all of them
Fiestas Chile Limon' Seasoning- I use just a few sprinkles
1 - 2 Small Blocks of Cheeses - I use Monterey Jack and Cheddar
2 Fajita Seasoning Mix packets - I use a mix of 2 cheap brands
Chopped Green Chilies (optional)
Cilantro - I chop about 1/4 cup to slow cook with veggies
Prepping the filling : The Crockpot
Here's why it takes me a bit, I use a crockpot the night before or get it started early in the morning.
First, I get a frying pan, add a little butter, and sear my chicken with some fiesta style seasonings (chile limon), or a sprinkle from one of your fajita seasoning packets. I don't spend too much in a pan just enough to butter in some seasonings on my chicken, too much will lead to dry chicken later. Then I toss it into the crockpot for a few hours.
In the crockpot I will add a little chicken broth. Not a lot, maybe a half cup or so. All of the diced peppers, onions, cilantro, all contents of the dry seasoning packets, and lightly pan seared chicken goes right in, set on high for 4 hours. Depends on how much you have going in the pot as to really how long you should cook it. I stir it all around off and off throughout the 4 hours. I just make sure it's not dry and cooking thoroughly.
Tortillas
In a small frying pan, add a little oil of your choosing. I like to use vegetable or corn.
Get your small corn tortillas (white or yellow) and you will move quickly frying on both sides each tortilla. I used 16 for this large casserole dish. I think. lol
Fry as many tortillas as you need. When you're done, place them aside to cool for some later handling.
Get your chicken and shred everything in the crockpot together. If you have it juicy enough and cooked enough it will shred nicely and easily. Take this time to taste & see if you need to add more flavor. You probably won't need it though.
Casserole Dish: I spread a thin layer of refried beans on the bottom of my casserole dish, sprinkle a little salt & pepper, and then a thin layer of red enchilada sauce. Set aside to add the enchiladas.
Filling the Tortillas
After it is all shredded and mixed together, you can start stuffing your tortillas. It will be a juicy but tasty mess. haha I fill it up and add a little sprinkle of cheese so it sticks the filling to the tortilla.
After that, it's time to place them upside down, or open flap down, in the casserole dish. Placing one right beside the other until it is all filled. Then I pour red enchilada sauce all over the top. I will use the green verde sauce on 1/4 to half of the enchiladas. My husband likes the green. It's spicier.
Toppings
Before you cook, you can add a little diced white onions sprinkled with the chopped green chilies, and which is so good, my favs actually. I usually sprinkle any left over chicken I may have before I top with all the cheeses also.
When it comes out of the oven. I let it set covered for a minute. I then will add shredded lettuce, sour cream, & sliced avocados and diced tomatoes.
In the picture below, I used beef instead of doing the crockpot chicken. Just cook beef like you were making tacos. I use fajita mix instead of taco seasoning though. You can also see I used green onions for the topping instead of diced white onions and green chilies.

Family favorites
Hispanic cuisines are a family favorite around here (my fav is Asian & BBQ), so when they are craving it but we can't afford to Doordash it, this is the go to meal kit pick.
One day I'll befriend my neighbors and have them teach me for real how to cook their dishes. Until then, eating this pan of yum!
